100g (3.5oz) paleo dark chocolate (Hu or Lily’s brand), roughly chopped
1/2 tsp (2ml) avocado oil or coconut oil
Directions
In a bowl, combine the pistachio butter, collagen and cocoa nibs. Mix until smooth and well incorporated.
Carefully transfer the pistachio mixture into a silicone chocolate mold. Place into the freezer for a minimum of 4 hours.
Meanwhile, place the chopped chocolate in a heatproof bowl, then set that bowl over a pot of simmering water. Melt the chocolate, stirring often. Remove the bowl from the pot, and add the coconut oil and stir until smooth and glossy.
Remove the truffles from the freezer. Working one at a time, dip a truffle into the melted chocolate. Use two spoons to roll it around so it’s coated. Place the truffle onto a baking sheet lined with parchment paper. Repeat with the remaining truffles. Let the truffles set in the freezer for 1 hour. Truffles can be stored in an air-tight container in the freezer for up to 2 months. Defrost the truffles for 10 minutes before serving.
